Nothing taste better than a warm soup after a early morning workout during the winter!

3/4-1 pound of Sausage without Casings ( I use Bass Farm or Neese hot)
3 ribs celery sliced
3 carrots peeled and slice
1 yellow onion minced
3 cloves of garlic
Dash of oregano
Salt to taste
8 cups of low sodium chicken, vegetable, bone broth
1 can diced tomatoes
1 can (14.5 oz) cannellini beans, drained and rinse
3 cups of any pasta of your choice (I also use lentils)
Kale, spinach or argula (optional) 2 cups

Heat a large pot and start to cook the sausage
Add the celery, carrots, onions, garlic, oregano while the sausage cooks
Add broth, tomatoes, beans, pasta and leaf veggie

Turn to warm or very low and let it sit for 2-3 hours
